Parmesan Nest with Truffle

For 1 person 


  • 2 eggs
  • 1 tbsp of butter
  • 120 gr grated parmisan cheese
  • salt and peper for taste
  • sliced fresh truffle or truffle oil or truffle in water and salt
  • 10 gr of truffle butter


Take a sheet of baking paper and cover with the grated parmesan cheese to form a circle shape. Place in a pre heated oven of 200° C for 3-4 minutes, once the cheese has melted and is lightly golden remove from the oven.

While the parmesan circle is still warm place it over a bowl to form its shape, keeping it slightly warm.

Melt the plain butter in a no-stick pan, add the egg salt and pepper to cook sunny side up.

The egg yoke must remain slightly raw.

Turn over the parmesan cheese basket onto a plate, place the egg in the center, on the side, melt the truffle butter and pour on top of the egg, serve with truffle slices to your taste.
